Ok, so i am pretty chuffed with this lil creation, and I feel confident that it hasn’t been done before, and if it has, well then whatever! I was inspired by stuffed orange peppers that look like jack-o-lanterns, but i wanted to make Frankensteins monster, because he’s my fave!
So this is going to be a super quick to the point post… If you’re into making halloween inspired food, this is a super yummy wholesome vegan dish that is relatively quick to whip up… I stuffed my peppers with a lentil curry, but you could stuff them with ANYTHING… (the lentil curry also looks a little creepy peaking out of the eyes) and then I piped on some mashed potatoes with a twist… I actually caved and went to a pharmacy and bought some activated freaking charcoal! hahahahahaha! So not only is this a spooktacular dish, it’s also super ON TREND YO!!!
So this is like a halloweeny cottage pie, that is vegan… OF COURSE! here is the recipe i used…
500g dried lentils
5 cans of chopped pealed tomatoes
50g tomato paste
2 tablespoons of your favourite curry spice mix (or herbs if you’re not into curry)
1 clove of garlic finely chopped
Throw everything in a pot, stir, bring to a boil and then simmer for 45 minutes!
Yup!!! it’s that easy!
Then for the mashed potatoes, I peeled and boiled about 5 potatoes and mashed them up with a splash of soy milk, then i ground up 10 activated charcoal tabs and mixed it all together…
I cut the tops off a few green peppers and carved out little zombie/frankenstein-ey faces, then i filled them with the lentil mixture, and piped on some mashed potatoes.
Bake in the oven at 180 C for 45 minutes…
